Harvest Granola

It’s that time of year!

This is one of many granola recipes that I love to make around Autumn!

It is great over yogurt, ice cream, or as a midnight cereal treat!

Ingredients:

1/3 C. Pumpkin Purée 

1/2 C. – 3/4 C. Maple Syrup (if you like granola on the sweeter side, I would add 3/4 C.) 

3/4 C. Avocado Oil or Coconut Oil 

1 t. Pumpkin Pie Spice 

1 t. Cinnamon  

1/2 t. Cardamom 

1 t. Salt 

3 C. Organic Rolled Oats

1 C. Unsalted nut assortment 

1/2 C. Slivered almonds 

1 C. Dried cherries 

1 t. Vanilla Extract 

1/4 C. Honey 

Instructions:

Preheat oven to 300 degrees. 

 In a large bowl mix together pumpkin, syrup, vanilla, oil, and spices until combined. Add Oats and nuts. Stir until well coated. 

Prepare a large baking sheet with parchment paper. If without, you can coat the bottom of your pan with a little bit of oil or butter. 

Spread oat mixture out on a pan making sure it has plenty of room and is in a thin layer. 

Bake for 30 min. Remove pan from oven and add cherries. Bake for another 15-20 min, until brown. Drizzle on top the honey and let granola sit for 1 hour. Break a part and store in an airtight container for up to 3 weeks. Enjoy!!
