Melt in your mouth, creamy, delicateā¦need I say more?
I came up with this idea when I went to make Linzer Cookies a couple years ago and fell in love!
These are now apart of our family holiday baking tradition and I hope they make into yours as well!
Merry Christmas!š
*This recipe yields about 12-16 cookies but I highly recommend doubling this recipe!
Ingredients:
- 3/4 cup unsalted butter, softened
- 1/2 cup sugar
- 1 egg yolk
- 1 teaspoon vanilla bean paste or vanilla extract
- 1.5 cups all purpose flour
- 1/4 cup jam of choice
- 1/4 cup dulce de leche
- 1/4 teaspoon salt
Instructions:
- Cream the butter. Gradually add the sugar and mix until creamy.
- Add the egg yolk and vanilla. Mix until combined.
- Add the flour and salt, mixing until the dough comes together.
- Optional: chill the dough for an hour to prevent the cookies from spreading.
- Preheat the oven to 350 degrees.
- Form dough into Ā½ tablespoon balls.
- Place on an ungreased cookie sheet lined with parchment. The cookies do spread a bit so leave room.
- Make an indent in the center of the dough with your thumb and fill half of the cookies with the jam and the other half with the dulce de leche. I like to use a 1/4 teaspoon measuring spoon for this part!
- Bake in a preheated 350 degree oven until light brown for 10-12 minutes.
- Remove from oven and cool. Dust with powdered sugar. Store in an airtight container for up to 14 days!
